  • bjbjBrBr Jan: We are going to talk about corn for a second. We are in August now, so we
  • really at the end of the really best corn when the fresh corn is just amazing as possible.
  • Now we still have lots of fresh corn, but it's just not as good as it was a month ago.
  • However, it's still pretty good. So this is the quickest, simplest, easiest, way to take
  • advantage of corn, and frankly when it's really fresh and really good this is my favorite
  • way to do it. It cooks it very quickly. It enhances it just a little bit and it s just
  • delicious. All right. So very rapid boiling water, and I heard my grandparents generation
  • say that you start your water boiling before you go out in the field to pick your corn
  • because that's how fresh your corn should be. I always thought that was funny. Michael
  • Kennedy [SP] would do stuff like that. Now, a little bit of salt in the water, and I like
  • to break them in half. It just makes it a little bit easier to handle, and here's a
  • trick I'm only going to do a couple of these this way just to show you. Now when you have
  • got real good, fresh corn I've seen everything from boil it from 20 minutes to 40 minutes,
  • if it's really sweet. A month ago it was extremely sweet and it wouldn't have needed but about
  • four or five minutes. It's a bit more starchier now, so it's going to need a bit more cooking
  • time. I'm going to give this about seven or eight minutes. You just walk away and leave
  • it alone. That's all you ve got to do, so 7 minutes. All right. So we had this on about
  • seven minutes on a nice hard boil, and I pulled it out. You ve got to let it cool down because
  • it s one of those things like pizza. When you bite into pizza, and it's so hot you burn
  • your mouth and you don t care and you do it again. I do lots of smart things like that.
  • This is how you do it perfectly, my butter is not quite melted, but the perfect amount
  • of butter can be applied with a pastry brush. See, I will usually stick this on the table
  • with a little pastry brush with every two or three kids and let them do their own. All
  • right, let's see. Oh yeah, perfect. It does not get any better than fresh corn. If you
